PENNSYLVANIA RYE WHISKEY

Our recipe uses only rye grain and malt to deliver a pure expression of the taste of classic Pennsylvania Rye Whiskey which then evolves by way of barrel aging at least six months in charred, new oak quarter casks to reach the right balance between complexity and smoothness. The result is a very smooth whiskey that delivers that up front spice that rye is known for, while finishing with a full and round mouth feel.

TASTING NOTES...

Floral and spicy on the nose with a well-balanced mouth feel and flavor — up-front and back-end spice, cinnamon on the mid-palate. Underlying notes of dried fruit and black cherry with hints of tobacco, vanilla and oak.

DAD’S HAT®
PENNSYLVANIA RYE WHISKEY
FINISHED IN VERMOUTH BARRELS

For this modern classic, we’ve selected casks previously inhabited by Quady Winery’s Vya Sweet Vermouth to create an amazing double finish rye. The process takes our flagship rye (already aged a minimum of 6 months) and ages it a second time in select vermouth barrels for an additional 3 months — merging the warm, balanced flavors of American vermouth with our smooth, spicy rye to deliver an exceptional nose with a distinctive taste and character all its own.

TASTING NOTES...

Deep reddish-brown hue yields to a rich nose of orange, cinnamon, pepper and vanilla – evolving as it opens. Leads with up-front spice to mid-palate dryness with the delicate finish of sweet vermouth on the back of the tongue. Round, complex flavor delivered in layers and demanding to be savored.

DAD’S HAT®
PENNSYLVANIA RYE WHISKEY
FINISHED IN PORT WINE BARRELS

Rich port wine flavor meets genuine rye spice as we add another unique double finish rye to the ranks with our Port Wine Finish Rye. This rye will be double finished (for an additional three months) in separate barrels which previously contained port wine, made with red grapes and known for a fruity, pleasant sweetness.

TASTING NOTES...

Dark, robust color with a nose of deep florals, fruit and spices. Forward pepper yields to the port fruit on the mid-palate, complemented by cinnamon and cloves. Coats the tongue and finishes with black cherry. Well-balanced and smooth, pairing perfectly with fine cheeses and charcuterie.

BOTTLED IN BOND PENNSYLVANIA
STRAIGHT RYE WHISKEY (4 YEAR OLD)

The rarest Dad’s Hat Rye ever, available only at the distillery. In response to a growing problem with counterfeit whiskey, the US Congress passed the Bottled-in-Bond Act of 1897 which set strict standards that must be followed for a whiskey to wear “Bottled in Bond” on its label. To achieve this rare status, “Bonded” whiskey must be at least 4 years old, aged in new, charred oak barrels, made by one distiller at one distillery, originating from the same year of distillation, and bottled at 100 proof.

TASTING NOTES...

Well balanced, spicy rye with a rich malt edge. Deep color reminiscent of a classic Monongahela Red with a nose redolent with malt sweetness and dried fruit. Rye spice sparkles throughout yielding to a long finish with hints of vanilla, tobacco and light wood notes.

PENNSYLVANIA STRAIGHT RYE WHISKEY
(3 YEAR OLD)

The first Straight Rye made in Pennsylvania in over 25 years, this delicious whiskey is distilled farm-to-bottle in Pennsylvania with locally harvested grain and aged for at least three years. The classic Pre-Prohibition flavor profile is the result of time-tested distilling methods and painstaking attention to detail. Produced in extremely limited quantities for sale direct from the Dad’s Hat Distillery.

TASTING NOTES...

A lush and complex rye in the classic, spicy Pennsylvania Style. The nose reveals rye grass and burnt sugar with hints of vanilla. The flavor coats the tongue in layers of pepper and cinnamon spice, green apple, fig and cocoa powder with a long smooth and lingering finish. This rye really delivers.
