PENNSYLVANIA RYE WHISKEY

Our recipe uses only rye grain and malt to deliver a pure expression of the taste of classic Pennsylvania Rye Whiskey which then evolves by way of barrel aging at least six months in charred, new oak quarter casks to reach the right balance between complexity and smoothness. The result is a very smooth whiskey that delivers that up front spice that rye is known for, while finishing with a full and round mouth feel.

TASTING NOTES...

Floral and spicy on the nose with a well-balanced mouth feel and flavor — up-front and back-end spice, cinnamon on the mid-palate. Underlying notes of dried fruit and black cherry with hints of tobacco, vanilla and oak.

DAD’S HAT®
PENNSYLVANIA RYE WHISKEY
FINISHED IN VERMOUTH BARRELS

For this modern classic, we’ve selected casks previously inhabited by Quady Winery’s Vya Sweet Vermouth to create an amazing double finish rye. The process takes our flagship rye (already aged a minimum of 6 months) and ages it a second time in select vermouth barrels for an additional 3 months — merging the warm, balanced flavors of American vermouth with our smooth, spicy rye to deliver an exceptional nose with a distinctive taste and character all its own.

TASTING NOTES...

Deep reddish-brown hue yields to a rich nose of orange, cinnamon, pepper and vanilla – evolving as it opens. Leads with up-front spice to mid-palate dryness with the delicate finish of sweet vermouth on the back of the tongue. Round, complex flavor delivered in layers and demanding to be savored.

White Rye, derived straight from the still and diluted down to 100 proof, is our spiritual throwback to the good old days of clandestine Appalachian distilling, is This approach delivers the taste of a classic white spirit ready to bottle and drink with no barrel aging. The result is a crystal clear distilled spirit that’s pure, spicy, clean and smooth. White Rye is the perfect fit for all your favorite cocktails with a uniquely delicious flavor profile that even hardcore whiskey traditionalists can’t help but enjoy.

TASTING NOTES...

Primary hit of delicate malt breaks down into waves of lavender, goldenrod and apple — tastes first of matchstick and white cherry, finishing in white raspberry seed and mild anise.

PENNSYLVANIA RYE WHISKEY
FINISHED IN PORT WINE BARRELS

Rich port wine flavor meets genuine rye spice as we add another unique double finish rye to the ranks with our Port Wine Finish Rye. This rye will be double finished (for an additional three months) in separate barrels which previously contained port wine, made with red grapes and known for a fruity, pleasant sweetness. Available in limited release only at our Bucks County distillery.

TASTING NOTES...

Dark, robust color with a nose of deep florals, fruit and spices. Forward pepper yields to the port fruit on the mid-palate, complemented by cinnamon and cloves. Coats the tongue and finishes with black cherry. Well-balanced and smooth, pairing perfectly with fine cheeses and charcuterie.

DAD’S HAT®
SINGLE BARREL CASK STRENGTH
PENNSYLVANIA RYE WHISKEY

Carefully selected from the best of the best of our fine stock, a limited number of special barrels are on periodically tapped to be bottled separately at cask strength. Unlike our original aged rye, in which water is added before bottling to lower the alcohol content to 45%, this “barrel to bottle” rye whiskey is delivered direct and undiluted for maximum flavor. Available exclusively at our distillery, orders for this limited release (only 65 bottles per barrel) must be picked up on-site as we do not currently ship this product. Reserve your bottle today!

TASTING NOTES...

Rare rye at its full flavored finest –  up-front and back-end spice our rye is known for with varying tones of spiciness that are uniformly different with each batch. Not to be spoiled with ice or mixers, just a small amount of water added to taste.
